  • ½ cup chopped broccoli
  • ½ cup diced carrots
  • 1 cup frozen peas
  • 1 teaspoon vegetable oil
  • 3 tablespoons soy sauce
  • 2 tablespoons peanut oil
  • 1 large egg, beaten
  • ½ tablespoon salt
  • 2 cups medium-grain white rice
  • 1 teaspoon ginger
  • ½ cup minced garlic
  • 2 cups water

Directions:

  1. Add a teaspoon of vegetable oil, 2 cups of white rice, and 2 cups of water into a large pot on medium-high heat. Allow the ingredients to cook together until the water starts rapidly boiling.
  2. Adjust the heat setting on the stove to low and then cover the pot with the rice, leaving it untouched for 15 minutes. Remove the lid, stir the rice around for a minute, and cover again for another 10 minutes.
  3. Place a large wok or skillet on a separate burner on low heat while waiting the 10 minutes for the rice to finish cooking. Add the 2 tablespoons of peanut oil, garlic, and green onion into the skillet, allowing them to cook alone for 2-3 minutes.
  4. Slightly beat your large egg and throw it into the skillet, mixing it around with a fork until the egg is cooked.
  5. Remove your cooked white rice from the large pot and pour it into the skillet with the egg, onion, and peanut oil. Use a spatula to blend the ingredients together for one minute.
  6. Throw your broccoli, carrots, and peas into the skillet. Mix them around and then add the soy sauce, salt, and ginger.
  7. Leave the ingredients to cook together for 3-5 minutes, mix them around again, and then wait an extra 5-8 minutes before removing the rice from the skillet.
